Tzatziki Sauce

Ingredients
1 medium cucumber, peeled, seeded, and cut into chucks
1 tsp salt
1 c plain Greek yogurt
1 clove of garlic, minced
1 Tbsp fresh lemon juice
1 Tbsp olive oil
1 tsp red wine vinegar
2 Tbsp chopped fresh dill
1/8 tsp pepper
Instructions
Start by peeling, seeding, and cutting 1 medium cucumber into chunks.
Place the cucumber in a strainer and sprinkle it with salt. Toss to ensure that all the cucumber chunks are coated with salt. Allow the cucumbers to rest at room temperature for 30 minutes to remove excess water.
After 30 minutes, rinse the cucumbers under running water and dry them completely using a paper towel or tea towel.
Chop the cucumber into small pieces and place them in a bowl.
Add 1 cup of plain Greek yogurt, 1 minced clove of garlic, 1 Tbsp of fresh lemon juice, 1 Tbsp of olive oil, 1 tsp of red wine vinegar, 2 Tbsp of chopped fresh dill, and 1/8 tsp of pepper to the bowl with the cucumber. Mix well until all the ingredients are fully combined.
Store the cucumber yogurt dip in the refrigerator for up to 3 days.
