Cucumber Sandwiches

Ingredients
½ c watercress leaves
¼ c chopped green onions
¼ tsp white pepper
1/8 tsp salt
¼ c mayonnaise
3 oz of softened cream cheese
20 slices of thin sliced Roma tomatoes, seeded
20 thin slices of cucumber
10 slices of thin sliced sourdough bread
5 slices of thin sliced wheat bread
Instructions
In a food processor, combine watercress, green onion, pepper, salt, lemon juice, mayonnaise, and cream cheese until smooth. Refrigerate the mixture for 15 minutes before assembly.
Cut the bread into circles or squares, making sure they are the same size.
Spread the cream cheese mixture on one side of each piece of bread.
Assemble each sandwich with sourdough on the bottom, a slice of cucumber, a piece of wheat, and a slice of tomato, and top it with sourdough again, making sure the cream cheese mixture is inside the sandwich.
Cover the sandwiches with plastic wrap and refrigerate for up to 1 hour before serving.
