Chicken Gyros

Chicken Gyros

Ingredients 
2 Skinless, boneless chicken breasts
¼ c olive oil
¼ c lemon juice
3 Tbsp plain Greek yogurt
1 Tbsp red wine vinegar
¼ c fine chopped red onion
2 cloves of garlic, minced
1 ½ Tbsp fresh oregano, minced
1 Tbsp fresh thyme, minced
½ tsp coriander
1 tsp salt
1 tsp pepper

Instructions
Combine Olive oil, Lemon juice, greek yogurt, red wine vinegar, red onion, garlic, oregano, thyme, coriander, and salt in a glass bowl.
Butterfly chicken breast and place it in a gallon resealable plastic bag, pour marinade over the chicken, making sure it is coated.
Refrigerate for 2-4 hours.
Remove from refrigerator 30 minutes before grilling.
Heat the grill to hot and grill the chicken until the internal temperature is 165 degrees, turning halfway through the grilling.
Tent chicken with tin foil for 10 minutes before slicing into strips.
Serve chicken on flatbread with lettuce, tomatoes, cucumbers, Kalamata olives, red onions, feta cheese, and tzatziki sauce.

This is a family favorite and is made from spring to fall or until we can't grill any longer due to the snow.  Easy but does take some planning ahead to pull it all together.
