Ingredients
4 c of fresh basil
4 Tbsp of garlic peeled
1 c of toasted pecans or pine nuts
1 c Parmesan Cheese finely shredded
1 c Olive Oil
½ tsp Salt
¼ tsp pepper
Instructions
To make fresh pesto, put all ingredients in a food processor and blend until smooth. Add salt to taste.
If you want to freeze the pesto for later use, combine basil, garlic, oil, salt, and pepper, and then divide the mixture into equal parts.
Freeze the pesto portions for up to 6 months.
When you're ready to use the pesto, take it out of the freezer to defrost. Then, add nuts and cheese to make the pesto ready to serve.
I love making Pesto with my basil plants from my flowerbeds. Keeps nicely, in refrigerator for 6 months. A bright addition to meals in fall and winter.
