Guacamole

Ingredients
2-3 ripe soft avocados
½ Roma tomato diced finely
¼ c finely chopped white onion
1/3 c finely chopped fresh cilantro
1 jalapeno, seeded and finely chopped
1 lime, juiced
2-3 cloves of garlic, minced
Salt to taste 1+ tsp
Instructions
Cut the avocado in half, and remove the seed and any dark spots. Scoop out the flesh and chop it up. Mash the avocado until smooth in a flat-bottomed glass container.
Add tomato, white onion, cilantro, jalapeno, lime juice, garlic, and salt to the bowl.
Mix all ingredients well and taste to check the salt level. Remember, it usually takes more salt than you think.
Serve immediately. The guacamole doesn't keep well in the refrigerator, but it can be stored overnight in an airtight container with plastic wrap touching the surface to prevent browning.
