Bean Dip
Bean Dip

Ingredients
1 Tbs Butter
2 c of cooked and drained pinto beans
1 jalapeno, minced
¼ c red onion, minced
4 cloves garlic, minced
¼ c salsa
½ c shredded sharp cheddar cheese
Instructions
In a small skillet over medium heat, melt 1 tablespoon of butter. Add jalapeno, red onion, and garlic, and sauté until caramelized. Remove from heat and let cool to room temperature.
In a food processor, add drained pinto beans and blend until smooth. Transfer the blended beans to a mixing bowl.
To the bowl with the blended pinto beans, add the cooled sautéed veggies, salsa, and cheese. Mix all ingredients well.
Transfer the mixture to a glass baking dish and bake until bubbling.
If using as a bean dip, sprinkle additional cheese on top and melt in the oven. If using in a 7-Layer Dip, let it cool to room temperature before assembling the dip.
