Homemade French Fries

Ingredients
6 Large Russet Potatoes; peeled and cut into fries
salt to taste
Deep Fry Oil ( Peanut is the best but any vegetable oil will work)
Instructions
Prepare the potatoes by peeling and cutting 2 pounds into your preferred french fry shape.
Fill a kettle with enough water to hold the fries and add salt. Bring it to a boil. Add the prepared French Fries or Chips to the boiling water.
Blanch the fries for 4-5 minutes and then drain the water completely.
Allow the fries to dry before frying. This can be done the day before, in the morning, or right away but they will not be as crisp if done immediately.
Preheat your oven to 275 degrees Fahrenheit.
Heat your deep fryer with your desired oil to 375 degrees Fahrenheit.
Cook small batches of fries for 12 minutes or until they are evenly browned, chips take 10 minutes or until evenly brown and crisp. 
Remove them from the fryer and place them on a 9”x13” baking dish lined with paper towels or a cooling rack to drain the excess oil.
Salt the fries to taste.
Put the baking dish with the fries in the preheated oven to keep them hot and crisp.
Leftover French Fries after cooling can be placed in a plastic sealed bag and frozen to use at another time.  
To reheat you can deep fry again for 1-2 minutes to reheat or reheat in oven at 375 degrees for 3-5 min or until hot through.
