Salmon Patties

Ingredients
1 c Panko breadcrumbs
½ c grated onion
1 clove of garlic minced
14 oz canned salmon, drained
2 green onions, chopped
2 eggs
1/3 c fresh dill
½ c parmesan finely shredded
¼ tsp salt
¼ tsp pepper
Vegetable oil for frying
Instructions
Place breadcrumbs in a bowl and mist with water. Let it sit for 5 minutes to moisten the breadcrumbs.
Add grated onion with moisture from onions to the bowl with breadcrumbs and mix.
Mix in garlic, green onions, eggs, dill, parmesan, salt, and pepper.
Gently flake the salmon onto the mixture and fold in so that the salmon stays in flakes.
Form the mixture into salmon patties using about ¼ cup of the mixture. Place the patties on a cookie sheet lined with wax paper and refrigerate for 1 hour before frying.
Heat a heavy bottom skillet, such as a cast-iron skillet, over high heat. Add enough oil to cover the bottom of the skillet by about ¼ inch.
Gently add salmon patties to the skillet and fry until crispy, then flip and fry the other side until crispy as well. Place the cooked patties on a platter lined with paper towels to soak up any excess oil.
Serve immediately with tartar sauce, coleslaw, and your choice of vegetable.
