Tangy Greenbean Casserole

Ingrediencies
2 Tablespoons butter
2 Tablespoons flour
1 teaspoon salt
¼ teaspoon pepper
1 teaspoon sugar (optional)
½ grated sweet onion
2 cloves minced garlic
1 cup sour cream
2 cups of fresh green beans
4 cups chicken stock
¼ cup grated Swiss cheese
6 ounces French Fried Onions
Instructions
In a large kettle bring the 4 cups of chicken stock to a boil. Add fresh green beans and blanch for 5 minutes. Drain immediately and place in a large bowl of ice water to stop the cooking process. Drain and set aside.
In a heavy skillet melt butter over medium heat, add minced garlic and sauté for 1 minute. In a bowl blend together flour, salt, pepper, sugar, and onion, add to butter and garlic mixture. Sauté for 1-3 minutes until onion is clear. Whisk in sour cream gradually, whisking constantly over medium heat until thickened.
Add blanched green beans to mixture. Place the green bean mixture in a greased baking dish and sprinkle with Swiss cheese and French-fried onions.
Bake until hot through about 10-20 minutes and the broil to crisp up onions and brown cheese for 1-5 minutes.
Serve hot.
