Ingredients
2 ½ tsp rapid-rise active dry yeast
2 ½ tsp sugar
2/3 c 110-degree water
½ c + 2 Tbsp milk heated to 110 degrees
1 ¼ tsp salt
3 c bread flour
Instructions
In an electric stand mixer, combine warm water, yeast, and sugar. Let sit for 5 minutes or until the yeast blooms.
Add milk, oil, salt, and 1 ½ cups of flour to the mixer. Mix completely for 5 minutes.
Add the rest of the flour and continue kneading for 5 minutes or until the dough is elastic.
Rub olive oil on the bowl and dough. Cover with a moist towel and allow it to rise for 1 ½ hours or until it doubles in size in a warm location.
Divide the dough into 8 equal portions and flatten it into round circles.
Heat a non-stick skillet over medium heat until hot.
Cook each circle of dough on each side until it bubbles and turns golden brown.
Keep the flatbread warm and serve.
