Quesadilla Quiche

Quesadilla Quiche
Prep Time: 20 Mins Cook Time: 45-55 mins Total Time: 1 hr 15 mins

Ingredients
1 recipe of pice crust
1 c onions, chopped
1 Tbsp butter
1 c tomatoes, chopped
½ c black olices, sliced
2 cloves garlic, minced
¼ ytsp cumin
⅛ tsp pepper
3 drops of hot pepper sauce
½ c green chillies, chopped
2 eggs
1 c Monterey Jack cheese, shredded
1 c Sharp Cheddar Cheese, Shredded

Instructions
Preheat oven to 375 degree.
Make pie crust recipe and roll out pie crust
Put the bottom crust in baking pan of choice, 9” pie pan, mini pie pans, or tart pan
In a skillet, melt butter over medium heat, add onions and cook for abut 5 mins or until tender. Set to side.
In a bowl combine tomatoes, olives, garlic, cumin, pepper and chili then pour over cooked onions and mix.
In a small bowl beat eggs and hot pepper sauce, reserve 2 Tbsp of mixture. Stir in ½ c of each cheese to egg mixture.
Sprinkle remaining cheese on bottom of pie crust.
Spoon the onion mixture over the shredded cheeses in pie crust.
Pour egg mixture with cheese over onion mixture, spread to cover top completely
Top with a second pie crust and seal edges.
Cut vent slits in top and brush with 2 tsp of reserved egg and hot sauce mixture. 
Bake in oven on lowest rack for 45- 55 minutes or until golden brown.
Let stand 5 minutes before slicing
Serve with sour cream, salsa, chopped tomatoes, and sliced olives and avocado.
