BBQ Rum Pineapple
BBQ Rum Pineapple
Prep Time: 15 Minutes Marinate Time 8 hours Cook Time: 15 minutes Expertise Servings: 6
Ingredients
1 whole fresh pineapple, skin removed, core removed, either sliced or cut in stripes. (Strips are easier to grill)
¼ c Spiced Rum
¼ c Brown Sugar
1 Tbsp ground cinnamon (pure)
½ tsp ground ginger
½ tsp ground nutmeg
½ tsp ground cloves
Instructions
Begin by preparing the pineapple. Peel, core, and slice it, and place the slices in a shallow glass bowl. Be sure not to use a metal bowl as it can react with the pineapple and rum mixture, creating an unpleasant taste.
In a 2-cup measuring glass, mix together all the remaining ingredients, and pour the mixture over the pineapple slices in the bowl. Cover the bowl and refrigerate for at least 1 hour, or overnight if possible.
Preheat the grill to high heat, and lightly oil the grate or use a grilling mat to prevent sticking.
Grill the marinated pineapple slices for 15 minutes, turning them halfway through, until the outside is dry and charred.
While the pineapple is grilling, pour the remaining marinade into a small kettle, and cook it down on the stovetop or grill side burner.
Serve the grilled pineapple with the reduced marinade as a sauce.
