Mini Key Lime Pies

Graham cracker crust
Ingredients
crust
1 ½ c finely ground graham crackers (use a food processor)
1/3 c white sugar
6 Tbsp butter, melted
½ tsp ground cinnamon
filling
3 c sweetened condensed milk
1 c sour cream
3 Tbsp grated Key Lime zest (zest limes before juicing)
1 c freshly squeezed Key lime juice
2 fresh Key limes, thinly sliced
Whipping cream

Instructions
Preheat oven to 375 degrees.
In a bowl, mix graham cracker crumbs, sugar, melted butter, and cinnamon until well blended.
Press the mixture into the bottom and up the sides of a cupcake pan lined with parchment cupcake liners.
Bake for 4-7 minutes, then remove from oven and allow to cool.
In another bowl, whisk together the sweetened condensed milk, sour cream, key lime juice, and zest until smooth.
Pour the filling into the cooled graham cracker crust, filling each to the top.
Bake at 350 degrees for 5-8 minutes.
Remove from oven and refrigerate until thoroughly chilled, for at least an hour.
To serve, garnish each mini pie with a lined slice and a dollop of whipping cream.
