Firecracker Chicken

Ingredients
 
1-2 lbs. boneless, skinless chicken breasts, cut into 1-inch chucks
Salt and pepper to taste
½ cup cornstarch
4 large eggs, beaten
¼- ½ cup vegetable oil
 
 
Sauce
1 ½ cups brown sugar
2/3 cup buffalo sauce
2 Tablespoon apple cider vinegar
½ teaspoon salt
½ teaspoon red pepper flakes
 
Instructions
 
· Preheat oven to 325 degrees F. Lightly spray 9x13 baking dish with Pam.
· Wisk all ingredients of sauce together in large bowl and set aside
· Salt and pepper chicken chunks. Put seasoned chicken in gallon zip lock with cornstarch. Make sure all chicken chunks are covered with cornstarch. Dip each chicken chuck in eggs.
· Heat oil in large skillet. Add chicken and cook until golden brown, about 1-2 minutes. Transfer to paper-towel lined plate; discard excess oil
· Place chicken in baking dish. Top with buffalo sauce mixture. Stir. Place into oven and bake until sauce has thickened, about 45 minutes. Stirring every 15 minutes.
· Serve immediately over steamed white rice
