Creamy Lemon Parmesan Chicken (Piccata)

Ingredients:

 2 Chicken breasts; butterflied and pounded

2 Tbsp flour

2 Tbsp finely grated Parmesan Cheese

1 Tsp salt

1 Tsp pepper


For the Sauce:

2 Tbsp olive oil

4 Tsp of butter

4 Tbsp minced garlic

2 ½ c chicken broth

1 c milk

2/3 c fresh grated Parmesan cheese

4 Tbsp capers

6 Tbsp lemon juice, fresh

4 Tsp cornstarch mixed 

4 Tbsp of water


Instructions

  1. In a shallow bowl, mix flour and parmesan cheese.

  2. Season chicken with salt and pepper, coat in flour mixture, and set aside.

  3. Heat 1 tablespoon of oil and 2 teaspoons of butter in a large skillet over medium-high heat.

  4. Fry chicken until golden on each side and cooked through (3-4 minutes).

  5. Transfer chicken to a warm plate.

  6. Add garlic to the skillet and fry until fragrant (1 minute).

  7. Reduce heat to low-medium, add broth and milk to the skillet, and bring to a boil.

  8. Season with salt and pepper to taste, and add parmesan cheese and capers. Let the sauce simmer for about 2 minutes until thickened.

  9. If the sauce is runny, mix in a cornstarch/water mixture in the center of the pan.

  10. Pour in lemon juice and simmer for a further minute.

  11. Add the chicken back into the skillet to serve.

  12. Serve over steamed vegetables, zucchini noodles, or cooked pasta with the sauce.

  13. Garnish with extra capers, lemon slices, and parsley.

This easy meal, will become your families  favorite dish.  Serve with a salad and bread of choice.  It freezes nicely and reheats in microwave  for a delicious  lunch.
