Mexican Street Corn Salad

Mexican Street Corn Salad

Ingredients
4 ear of corn husked
Olive oil, for brushing
1.5 Tablespoons mayonnaise 
2 cloves minced garlic
1 lime zested and juice (note: zest your lime before juicing)
1 bundle sliced green onions
½ c crumbled Cotija or feta cheese
¼ tsp chili powder
1 jalapeno, seeded and diced small
¼ tsp salt

Instructions
Preheat the grill to medium-high heat. Brush the corn and jalapeno with olive oil and place them on the grill. Grill each side for 2 minutes or until they get grill marks. Once done, remove them from the grill and let them cool down. Chop the jalapeno into bite-sized pieces with the seeds removed and cut the corn from the ear.
In a mixing bowl, combine the mayonnaise, minced garlic, lime zest, lime juice, chopped green onions, shredded cheese, chili powder, and salt. Stir the mixture until it is evenly combined. Add the chopped jalapeno and corn to the bowl and stir until they are coated with the mixture.
Serve the dish immediately or chill it in the refrigerator until ready to serve.
