Grilled Chicken Quarters

Ingredients
2-4 lbs. of chicken quarters
4 large cloves of garlic, peeled and grated
¼ c flat-leaf parsley
2 Tbsp of fresh lemon juice
¾ c mayonnaise, divided
Salt & pepper
3 green onions, chopped
½ c cilantro
Grilled green onions and citrus
2 bunches of green onions, trimmed
2 Tbsp Olive oil
Salt and pepper
2 small oranges, halved
2 lemons, halved

Instructions
In a food processor, blend garlic, parsley, lemon juice, ¼ cup mayonnaise, and ½ tsp salt and pepper. Rub 2 tbsp of the mixture on chicken quarters and refrigerate for 4 hours to overnight.
Remove chicken from the refrigerator to warm at room temperature while preheating the grill to medium-high.
Blend green onions, cilantro, and ½ cup mayonnaise in the food processor to make a dipping sauce. Refrigerate until serving.
Grill chicken quarters skin side down over direct heat for 2 minutes. Flip, move to indirect heat, brush with dipping sauce, and grill covered for 20 minutes.
Rotate chicken and grill until internal temperature reaches 165 degrees F, about 25-30 minutes. Rest the chicken covered with tinfoil for 10 minutes before cutting.
Toss green onions with oil, salt, and pepper, and grill with oranges and lemons for 2-3 minutes. Serve with the chicken quarters and the remaining dipping sauce
