Greek Salad

Ingredients
Dressing
8 Tbsp Virgin Olive Oil
2 Tbsp fresh lemon juice
4 tsp Red Wine Vinegar
3 cloves of garlic, minced
1 1/3 tsp dried oregano
Salad
2 Heads Romaine Lettuce, torn into bite-size pieces
4 Roma Tomatoes, seeded and chopped
1 ½ English cucumber, peeled and chopped
1 medium red onion, sliced into thin rings (soak in a bowl of ice water for 10 min to make the onion less sharp)
1 ½ c quartered kalamata olives
1-2 c crumbled feta
Instructions
To make the dressing, whisk together Virgin olive oil, lemon juice, red wine vinegar, garlic, and oregano until well blended. Season with salt and pepper to taste.
Slice the onion and soak it in ice water for 10 minutes. Drain the onions from ice water and pat them dry.
In a large salad bowl, combine the lettuce, tomatoes, cucumber, red onion, and kalamata olives.
Toss the salad with the dressing until evenly coated.
Sprinkle the feta cheese over the top of the salad and serve.
