Beet Greens

Ingredients
2 bunches beet greens, stems removed
1 Tbsp Olive oil
2 cloves garlic, minced
¼ tsp crushed red pepper flakes
Salt and pepper to taste
2 lemons, quartered
Instructions
Bring lightly salted water to a boil in a large kettle.
Add the beet greens to the boiling water and cook uncovered until tender, about 2 minutes.
Drain the beet greens and immediately cover them with ice water for several minutes to stop the cooking process.
Drain the beet greens completely in a colander.
Heat olive oil in a large skillet over medium heat.
Add garlic and crushed red pepper flakes and cook, stirring occasionally, until fragrant, about 1 minute.
Add the beet greens to the skillet and stir until evenly covered with the oil and garlic mixture.
Season with salt and pepper and cook just until the greens are hot.
Serve with lemon wedges.
