Fried Pickles

Ingredients
2 c Flour
¼ c. cornstarch
1/4 tsp salt
1.5 tsp black pepper
1 ¾ tsp Cajun seasoning
½ tsp paprika
¼ tsp cayenne pepper
½ tsp garlic powder
½ tsp onion power
1 c buttermilk
1 egg
1 16 oz, jar of dill pickle chips, drained and patted dry

Instructions:
Preheat a deep fryer or large cast iron skillet with vegetable or peanut oil to 375 degrees.
In two shallow bowls, whisk together the egg and buttermilk in the first bowl. In the second bowl, mix together all the dry ingredients.
Take patted dry pickle slices and dip them into the egg and buttermilk mixture. Remove from the mixture and coat the pickles in the flour mixture before placing them in the hot oil.
Fry the battered pickles until they turn golden brown on both sides, which should take about 2-3 minutes. Remove them from the oil and place them on a platter lined with paper towels.
Serve the fried pickles immediately with a side of horseradish or ranch dip.
