Potato Salad Make Just Right
Potato Salad is one of those things that people feel the need to overdo. They always wonder why it is not the best of the best. In the case of potato salad, less is better.
Picking your potatoes. I prefer new red potatoes but you can use any kind you like. If they are not new potatoes you will need to peel them after cooking. Always cook your potatoes whole and with the skins on them. This keeps them from becoming starchy and sticky.
I do not use boiled eggs in my salad since it makes the salad not keep well. Also, a lot of people do not like eggs. If you like eggs, make Deviled eggs to serve on the side. You can then add them to your own salad on your plate.
Simple Potato Salad
5 lb Red Potatoes or Russet cooked and cooled completely
1 medium sweet white onion diced
1 jar Gerkin kosher dill pickles (you can also use sweet pickles or half-and-half)
2 cups of Hellman's mayo (any other kind and your salad will not taste the same)
Add ons if you like...
1 can slice black olives
2-3 stalks of diced celery
Season to taste with....
Lawry's Seasoning
2 teaspoons of dill weed or 1/4 cup of fresh dill chopped
Black pepper
Boil potatoes until a fork comes out easily with skins on whole. Drain and cool completely. Dice up potatoes into a bowl with onion, pickles, olives, and celery. Mix in mayo until coated evenly. Mix in seasoning.
Simple Deviled Eggs
Bring water to a boil and add eggs. Boil for 10 minutes and drain. Rinse with cold or ice water. Peel right away to prevent shells from sticking.
Cut eggs in half and remove yolk to a bowl. Mash the yolk and add Hellmann's mayo. Place a 1/2 teaspoon full in each egg half. Sprinkle top with red pepper.
Refrigerate until serving. 1 hour to overnight.
