Creamy Poblano Sauce Over Chicken Rollups
This dish can be very spicy so it is not for the wimps of taste buds or the faint at heart. It is for those of you that love to add spice to your life and diet come along on a culinary trip down a twist of cultures meet each other. I have not decided where this recipe falls in Mexican, Tex-Mex, or some other place altogether. If you try the recipe let me know what you think.
Creamy Poblano Sauce
2-4 large poblano peppers, roasted, peeled and seeded (the less water they had during growing the spicer these peppers will be. Also, the roasting process does tame them slightly. I use 4+ when I make this recipe since I love the spice.)
In a blender, blend the poblano peppers after they have been roasted, peeled and seeded. Add 12 oz of heavy cream, 1 1/2 teaspoon of chicken bouillon and blend until smooth.
In a medium size kettle melt 2 tablespoons of butter. Stir in 2 tablespoons of flour to make a rue. With a whisk, whisk in the mixture of the blender. Whisk until all lumps of flour and butter mixture is gone. Turn down to medium low heat and stir frequently. When thick turn to low and stir occasionally. Do not boil.
Chicken Roll Ups
2 servings
1 chicken breast, butterfly cut and pounded and sprinkled with Cajun Seasoning
In a mixing bowl combine the following
8 oz Cream Cheese, softened to room temperature
5 Green Onions, chopped
1 tablespoon fresh cilantro, chopped
1 Fresh Jalapeno, seeded and diced
2-4 cloves of garlic
Take mixture and spread on each chicken breast. Roll the chicken breast up.
In two bowls. Place 2 eggs whisk in one. In other put 1 cup flour, 1 teaspoon cayenne, 1 teaspoon cajun season, 1 teaspoon chili powder and 1 teaspoon cumin mixed.
Dip each rolled chicken breast completely in egg and then the flour mixture. Place in skillet seam side down. Fry until light brown on all side of chicken roll. Remove and put in baking dish. Place in Oven for 30 minutes or until done at 375 degrees.
Place on plate and top with creamy poblano sauce. Serve with rice, refried bean or salad.
