Heaven is Always Found in Grilled Pizza
Our family loves to grill out as much as possible. The kids love me to make pizza during the winter but I don't like heating the kitchen up in the summer. So after seeing tons of recipes about grilling pizza I decided to take my pizza recipe to the grill.

Two hours before you need to make pizza you get to start your crust.
Pizza Crust
4 cup flour
1 1/2 teaspoons of salt
1/2 cup warm water (97-102 degrees)
2 1/4 teaspoons of rapid rise yeast
1 1/4 cups of room temperature water
2 tablespoons of olive oil
In a two up measuring up put warm water and yeast, whisk together and allow to stand for 5 minutes. Add your room temperature water and olive oil after 5 minutes and mix.
In a medium bowl put flour and salt. Pour in the yeast, olive oil and water mixture. Mix and knead until smooth. Form a dough ball and coat the bowl and outside of the dough with olive oil. COver with a warm damp towel and place in a draft free warm spot for two hours.

In a divided tray prepare your toppings for the pizza. This allows each person to customize the pizza to their own taste. You will want a variety of meats, veggies, cheeses and sauces.
Next prepare olive oil with Italian herbs and garlic. This mixture is used to coat the grill pan to keep the pizza from sticking. It also makes your crust crisp and tasty.
Heat grill to 400-500 degrees. I prefer closer to 400 degrees. It takes longer to cook the pizza but less chance of burning a side.
On a cutting board with flour take a fist size piece of dough and form into a small round dough shape.
Place on hot oiled grill pan for 3-5 minutes.
Remove to a cooking sheet. I use my stoneware since it stays warm from the grill and keeps my pizza warm.
Add sauce, cheese and toppings on cooked side.
Return to grill and cook for 5-10 minutes until cheese is melted and toppings are hot.
Using a pizza cutter, cut into four pieces and enjoy.
Yields: 5 small pizzas
Max out dog loves to eat the crust and leftover meat.
