Mexican Tilapia, Spanish Rice and Refried Beans

We love Mexican food and Tilapia is my favorite fish.  We found a recipe that begged to be changed.  Well maybe not but I just can't seem to follow a recipe and my hubby is just as bad.

Mexican Tilapia 

2 tilapia fillets, sprinkled with salt, pepper, chili powder, cumin and cayenne pepper (to taste)
2 tablespoons of olive oil
1 pint cherry tomatoes
2 garlic cloves, sliced thinly
1 can pitted green olives, sliced and chopped coarsely
1 heaping tablespoon capers, drained
1 tablespoon of fresh oregano, chopped
Lime wedges

1. Preheat oven to 350 degrees.  In large skillet heat oil and add cherry tomatoes to cook until skins split, add garlic and cook for another minute.  Remove from heat and stir in olives, capers and oregano.  Put in the bottom of a 9x9 baking dish.

2. place seasoned Tilapia on top of veggie mixture.  Bake for 20-25 minutes or until fish is done.  Use a fork to test the fish for flakiness.

3. Serve with lime wedge and sprinkled with chopped cilantro.

Make Spanish Rice from a box mix while fish is cooking.

Easy Homemade Refried Beans

Drain home cooked pinto beans and rinse.
Place in bowl and use a mixer to beat until bean look like refried beans.
Place in hot skillet with shortening (Crisco is best brand) .  Cook until heated completely.

You may add green chilies or jalapenos to change the flavor.   You will never buy store made Refried beans again.

Serve and enjoy.
