Fried Green Tomatoes with Horseradish Sauce

I don't like the gritty taste of cornmeal so these are made with just flour.
Tomatoes
4 green tomatoes, sliced and sprinkled with salt on each side
3 large egg whites
1 c self-rising flour
1 c butter
1/2 t Ground Red pepper
Slice tomatoes and sprinkle with salt. Layout on dishtowels or paper towels until moisture is reduced to prevent a soggy finish.
Whisk egg white in a shallow bowl for dipping.
Mix flour and red pepper together in a shallow bowl for digging
On a hot griddle melt butter. Dip tomatoes slice in flour, dip in egg white, finally dip in flour mixture again.
Place on griddle and fry until golden on each side. Place on a plate with paper towels to soak up excess butter.
Serve immediately with Horseradish sauce.
Sauce
1 cup sour cream
2 T Hellmann's mayonnaise
1 T Dijon mustard
2-3 T horseradish (fresh from deli, amount to your taste)
Salt and Pepper to taste
Mix all ingredients together and refrigerate until you serve.
