Chicken Tikka Masala

 Chicken Tikka Masala

Ingredients

2 T butter

2 Chicken Breast, butterflied and cut into cubes

1 medium onion, chopped

2 T of fresh lemon juice

14.5 oz of fire-roasted tomatoes, undrained

1 c heavy cream

3 T cornstarch

1/2 t salt

2 t paprika

1 T fresh minced garlic

1/2 t ground cumin

1 t Crushed Red Pepper

Melt butter in a large nonstick skillet on medium heat.  Add chicken and cook until only slightly pink.  Add onions, garlic, and lemon juice and saute until chicken is done about 10 minutes.  Add all spices and tomatoes and stir in completely.  In a separate bowl combine cream and cornstarch and whisk until smooth.  Gradually, add to the chicken mixture.  Bring to boil and reduce heat to low, stirring frequently, simmer 5 minutes.

Serve over cooked rice with naan
