Tasty Veggie Meatballs
I have never liked the taste or texture of beef and pork. My husband loves meatball subs and spaghetti and meatballs. So this last weekend he was like how about coming up with a veggie meatballs that are a spin off of your veggie burgers. So over a walk with our big dog we discussed the pros and cons of making a veggie meatball. The following recipe is what evolved from this discussion. I might say they are very tasty and freeze nicely if you can't use them all in one meal.

Makes 22-24 meatballs

Makes 22-24 meatballs
1 bag of Morning Star Crumbles 1 lb (or any other veggie ground meat substitute) defrosted
1 cup Italian bread crumbs (any brand is good, plain bread crumbs are not as tasty)
2 eggs
1/2 shredded Parmesan (any shredded Italian hard cheese)
1/2 cup half-n-half
1 small onion chopped finely
2 cloves garlic, pressed
1 teaspoon Italian seasoning
1/2 teaspoon oregano
Mix all the above in a bowl. Heat vegetable oil in medium skillet. Form into medium size balls and fry until crispy brown on all sides.
Cook spaghetti according to package. (I prefer angel hair) Heat your choice of spaghetti sauce.
Serve spaghetti topped with sauce and meatballs.
