One Pot Yummy Mediterranean Pasta

This recipe has developed over time.  The original recipe was called Spaghetti with Tomatoes, Black Olives, Garlic and Feta cheese, Contributed by Quick From Scratch Pasta.  This recipe is wonderful also as a leftovers, heated up in the microwave.  Excellent served with Tossed salad and Sauteed Asparagus. 
One Pot Yummy Mediterranean Pasta



Ingredient:
2 cups, seeded, and chopped Roma Tomatoes
1 cup Kalamata olives, pitted and cut in half
1 cup feta cheese, crumbled
6 tablespoons drained capers
1 cup artichoke hearts, drained and cut into bite size pieces
1/4 teaspoon salt
1/4 teaspoon black pepper
1 pound angel hair pasta
6 Tablespoons olive oil
7 cloves garlic, minced


Directions:

In a large kettle cook Angel hair pasta according to directions.  Drain.

While pasta is cooking, combine the tomatoes, olives, capers, artichoke hearts, feta cheese, salt and pepper.  Stir together and set aside.




After draining pasta, leave in strainer.  In kettle put olive oil and minced garlic.   Cook garlic for 1-2 minutes.  Add pasta to oil garlic mixture.  Toss until well coated.  

Remove from heat and toss with tomato mixture. 

Serve with salad, asparagus, and french bread.
