Fried Rice and Veggies
This recipe has been made in my family as long as I can remember. I am not sure where it came from of if my mom just put things together that she had in the frig. Also, she loved Chinese food and my dad refused to eat it when I was young. This was her take and still get my dad to eat. It is a great one pot meal that takes very little time and is delish.
Fried Rice and Veggies
In a large skillet place the following items:
3 tablespoons oil (olive or vegetable)
1 bag of Morning Star burger or 1 pound ground meat (if you are using meat you will need to cook the meat until almost done and then remove most of grease from the pan)
2 cups diced potatoes (these can be white or red, I prefer red and not peeled. You can peel if you like)
3/4 cup sliced baby carrots
3 stalks of celery, diced (don't use the tops)
1 large onion, chopped
4-5 cloves of garlic, pressed
Salt and pepper to taste (I like Lowery's seasoning also)
While these items fry. Cook enough rice to make 3-4 cups of cooked rice.
When your meat and veggies are crispy with a nice browning add
3 cups cooked rice. Fry until rice is light brown.
Serve with soy sauce to taste.
