Cheesy Potato Leek Soup with Pizzaz
This soup will knock your socks off. The taste is heavenly and makes you eat more than you should. It makes 8-10 servings, so that feeds like 4 people a meal.
Cheesy Potato Leek Soup With Pizzaz
Get your ingredients together to create this masterpiece of fall comfort.
4 cups of leeks, sliced (use the white and light green up to dark green part)
Saute leeks in butter with:
4 cloves of garlic, pressed (this gives the garlic the maximum amount of flavor)
While your leeks and garlic saute dice up the rest of your vegetables.
1 cup baby carrots, diced
2 stalks of celery with tops removed, diced
1 medium onion, Sweet white, diced
4 cups diced red potatoes
Add to sauteed leeks and garlic.
Cover with
6 cups of chicken broth. Cook until potatoes are done but not mushy.
While this is going on, do whatever you like. Read a book, work on your neighbors computer or make your sides. (Such as salad, crab cakes, or french bread)
Start your bacon frying to crumble on top. When the bacon begins to burn yell for husband to take over cooking of bacon. (this is much easier and keep the nasty grease off your clothing)
4-6 Green Onions sliced (Have neighbor slice them for you while you work on her computer)⁰
Add 1/2 white wine of your choice since you will want to drink the rest with supper.
Make a rue:
1/4 cup melted butter
1/4 cup flour
Mix well and set aside
When vegetables are cooked add:
2 cups heavy whipping cream
Rue
2 cups shredded sharp cheddar
Stir until smooth over med/low heat so as not to burn the soup. Do not boil this will curdle your milk and ruin your soup. This will result in tears and gnashing of teeth. Not a good thing.
Stir in 1/2 teaspoon of Lawrys seasoning
Season with salt and pepper to taste.
Serve and garnish with green onions and bacon crumbles. Enjoy your tasty soup.
