Grill Heaven in a Wrap
This recipe was created due to stuff I had in the frig and wanted to use. My husband claims this is the best thing we have ever made on the grill even though it is vegetarian. So let make a little heaven for your mouth.
Grill Heaven in a Wrap
Makes 4 wraps
Grill Heaven in a Wrap
Makes 4 wraps
4 wraps (we used Basil Tomato Wraps)
Goat Cheese or Feta Cheese (I like a mix of goat and feta cheese, while my husband prefers feta)
1/3 cup olive oil
4 Tablespoons Balsamic vinegar
3 cloves of garlic, pressed
1/4 basil (can use fresh or dried)
1/4 teaspoon garlic powder
1/8 teaspoon of paprika
1/8 salt
1/8 pepper (used ground pepper)
1 whole red pepper (cut in half with stem and seeds removed)
4 large portobello mushrooms
1 large white sweet onion (peeled and sliced in thick slices)
In a medium bowl mix oil, vinegar, garlic and spices.
Heat grill to medium high heat (350-400 degrees).
Place vegetables on cutting board and bast both sides of the vegetable completely.
Place on grill pan on grill. Grill each side for 5-8 minutes or until golden browned and cooked through.
Remove to a platter and slice into thick slices.
Place cheese in center of wrap.
Top with vegetables.
Wrap the wrap like a burrito before returning to grill pan on grill.
Grill with flap side down first to keep it from unwrapping. Cook for 2-5 minutes on a side until golden brown. Remove from grill and slice in half. Now it is time to enjoy your heaven in a wrap. Serve with pasta, potato or Greek salad.
