Deconstructed Egg Roll Bowl
Ingredients:
2 Tablespoons vegetable oil
2 cloves garlic, minced
2 Tablespoons, fresh fine grated ginger
1/2 cup chicken broth
4 Tablespoons HOney
3 Tablespoons Rice Wine Vinegar
2 Tablespoons low-sodium soy sauce
2 pinch of crushed red pepper flakes
1 lb ground pork or 1 package of Morningstar Crumbles
1 Tablespoon Toasted Sesame oil
1/2 onion, thinly sliced
3 medium carrots peeled and shredded
2 cups of thinly sliced green cabbage
1 red bell pepper, thinly sliced
2 heads of broccoli in small florets
1 package bean sprouts
1 cup of snow peas, cut n half
2 cups of uncooked Jasmine Rice
2 bundles of green onions thinly sliced
1 can unsweetened coconut milk
1 package small wonton wrappers, cut on short side into 1/4 inch wide strips
Sriracha
salt
4 eggs
Directions:
Prep all vegetables before starting your cooking. This will make it easier to cook and eat all the food hot.
Heat up deep fryer oil to fry wonton wrappers in at any time.
Cook rice according to package directions but replace the water with the unsweetened coconut milk and add water to equal the amount required to cook the rice.
In a large skillet over medium heat, heat oil. Add garlic and ginger and cook for about 1 minute. Add ground meat and cook until the meat is cooked through about 8-10 minutes. Add 1/2 teaspoon salt, chicken broth, honey, rice wine vinegar, soy sauce, and crushed red pepper. Cook until the liquid reduces and thickens.
In a separate wok skillet and heat over high until blazing hot. Add about 1 tablespoon of toasted sesame oil, 1/2 Tablespoon soy sauce, 1 teaspoon fresh minced ginger, and one vegetable. Repeat this with each vegetable. Keep each vegetable warm in a bowl with a plate over the opening until ready to serve.
Fry an egg for each person to their taste to over easy to free hard.
Build a bowl with rice on the bottom, top with meat mixture, vegetables of choice, egg, fried wonton strips, and drizzle with Sriracha. Enjoy
To make this recipe lighter remove the rice and wonton strips.
