Cajun Parmesan Tilapia

This recipe is a favorite of my family. It has been adapted from the recipe "Parmesan Tilapia: Fish That Taste Like Doritos" , www.the-girl-who-ate-everything.com. This is an easy recipe and makes for a fancy supper that takes only about 30 minutes to fix. This fish is served over white rice and a sauteed vegetable on the side. My family prefers broccoli. I usually start my rice cooking, then prep my fish and start my vegetable, then finish my fish. You may also serve a tossed salad on the side. This way the meal is all done at the same time and is hot and steamy.

Cajun Parmesan Tilapia
4 Servings

1/2 cup shredded Parmesan cheese
1/4 cup butter, softened (do not melt in microwave, note soften not melted)
3 Tablespoons mayo 
2 Tablespoons lemon juice (fresh is best)
1/4 teaspoon dried basil
1/8 teaspoon onion powder
1/8 teaspoon celery salt
Pepper to taste
4 Tilapia fillets (defrosted, dried)
Cajun seasoning
Cayenne pepper
Pepper

Preheat your oven's broiler. Take a cookie sheet and spray with Pam. Place your fillets on the pan. Season both sides with Cajun seasoning, Cayenne pepper and black pepper. Allow to rest while you wait to broil them. This allows the seasoning flavors to soak in. Note: Be careful not to get too much Cajun seasoning this will make your fish salty. Also, if you do not like spicy food leave off the cayenne pepper.


This is a good time to cut a few small pieces off to feed your Diva Kitty. FiFi loves raw Talapia.

Mix together in a bowl cheese, butter, mayo, lemon juice, basil, black pepper, onion powder and celery salt.


Broil a few inches from the heat for 3-4 minutes on a side. Remove from oven after broiling both sides of the fish, The fish should be done and not pink in the center. Top with cheese mixture. Return to oven for 2 more minutes or until light brown.
