Mouth Watering Stuffed Pepper

This recipe is from my mother and has been modified over time by me.  My daddy will do anything for me if I make him stuffed peppers for supper. This recipe can be made vegetarian or meat (need to add salt with meat).  I make it with soy meat because it is less greasy and once made if beef eater love the dish.  Come along for this comfort food ride.  This meal can be accompanied with tossed salad, and french bread or eaten just alone as a meal.


Mouth Watering Stuffed Pepper 
Ingredient:

2 cups cooked rice (I prefer Jasmine Rice but you can use minute rice, not as tasty)
1 bag of Morning Star Crumbles, defrosted (You may use any soy ground meat substitute, I just prefer Morning Star or ground beef, turkey or chicken.  You will need to salt your meat since soy meat already has salt)
1- 15 oz can tomato sauce
2 Tablespoons of tomato paste
2 large can of diced tomatoes or 4 -15 oz cans
1 large onion, chopped
5 cloves of garlic, pressed
1-3 Tablespoons of chili powder (start with one and taste to make sure you do not make it to spicy for your family.  I Use 1 tablespoon of spicy chili and powder and 1-2 of regular chili powder.  If too spicy add an addition can of diced tomatoes to tame it.)
2-4 cups of shredded sharp cheddar cheese (white or yellow does not matter, you can also you mild cheddar.  I just prefer the sharp flavor)
3 -6 green peppers

Directions:

In a large skillet add 2 tablespoons of cooking oil, soy meat, onions and garlic.  Saute until meat is browned.  Add tomato sauce, tomato paste and diced tomatoes.  Mix completely.  Add chili powder and taste to make sure seasoning level is to your liking.
Add cooked rice to tomato mixture.  Once it is mixed well stir in 2-3 cups of shredded cheese.
Spray the bottom of 9 x 13 pan with nonstick cooking spray.  Take peppers, cut in half, remove stem and seeds.  Place in pan with skin side down.  Once pan is full of pepper, cover with tomato, meat and rice mixture.

Place in oven and bake at 350 for about 30-45 minutes.  My family prefers the pepper to be a little crunchy others like it well done.  5 minutes before serving top with remained cheese and allow to melt.

This dish can also be put into two pans and half can be frozen and cooked at a later time.
