CheesyJalapeno Chicken Potato Soup

This has been the winter of making new soup recipes.  My step son tells me I make the best soup ever.  He loves to come in the kitchen when I am starting a soup and change the course of the soup to see if it still turns out yummy.

This soup is yummy and easy to make. Come along and make a soup that will make your taste buds sing and your tummy say yummy.

Cheesy Jalapeno Chicken Potato Soup



4 Jalapenos , seeded and sliced
1 large onion, chopped
3 cloves of garlic, pressed
1 -2 chicken breast, chopped
4 cups of diced red potatoes
1/3 cup flour
1/2 cup butter
6 cups chicken broth
2 cups heavy cream
2-4 cups of shredded sharp cheddar cheese
Salt and pepper to taste.
Bacon, cooked and chopped


In a large kettle melt butter.   Add chopped onions, jalapenos, pressed garlic and chopped chicken.  Saute until chicken is no longer pink. Add potatoes cook until half cooked.
Sprinkle flour over mixture and stir in until no lumps.
Add chicken broth and stir until no lumps remain.  Bring to boil and then simmer until potatoes are cooked.
Add heavy cream, heat until hot.  Add cheese and melt.  Season with pepper and salt to taste.
Serve topped with shredded cheese and bacon pieces.

You can leave the bacon and chicken out if you like, and replace the chicken broth with vegetable broth to make a vegetarian soup.
