Tantalizing Tilapia Tacos







Fish taco night at our house is always met with cheers of joy and then teenagers proceed to stand and watch the prep.  It is a quick meal but not quick enough for hungry teenagers.   This recipe has evolved over a period of time into this recipe that we find delish and I hope your family will also enjoy.


Tantalizing Tilapia Tacos
Serving 12 tacos

3 Tilapia fillets thawed and rinsed, sprinkle with cumin, cayenne, chili powder, coriander and salt. Allow to rest until ready to .cook on a cutting board.  Season both sides so as to get the delicious seasoning though the fish.   You can also season shrimp the same way to serve with the fish for added yummy flavors

In a bowl combine the following ingredients for the slaw to top the fish taco. Let sit until serving time.  It has wonderful flavor if you make it 2-3 hours before the meal.
1 bag of coleslaw mix
1 small red onion chopped finely
1 medium roma tomato, diced  and seeds removed
1-2 jalapeno, seeded and diced finely
2-4 cloves of garlic, though garlic press
Chopped fresh cilantro to taste
1 lime juiced
1/4 teaspoon cumin
1/4 teaspoon coriander
1/4 teaspoon chili powder


Sauce for top of tacos.  Place in bowl and mix well.  Place in frig until serving.
3 oz greek yogurt
3 oz sour cream
salt to taste
Sprinkle of chili powder

Chopped avocado is also a nice touch have available for the tacos

Serve with feta or goat cheese.  We prefer the feta due to its tangy taste.  Goat  Cheese is smooth and not as strong flavor. 

Time to cook the fish and corn tortillas.  We prefer to cook the fish in a skillet on the grill to keep the house from smelling like fish.  They can be cooked on stove top also. Heat oil (grape, sunflower or olive oil) to 400 degrees.  Grape is best for this due to its high flash point and the oil flavor is light so does not change the taste of the fish.  Fry fish for 3 minutes on a side.  Remove to bowl and shredded with a fork.



While fish is cooking heat vegetable oil to hot in skillet and fry corn tortilla about 30 sec - 45 seconds on a side.  Place between paper towels to keep warm and remove excess oil. 

Time to serve the delicious smelling feast of fish tacos.  My teenagers think I should have a fish taco food truck on a beach somewhere with this recipe.  Enjoy with a margarita.
